Thing is, he’s canonically MUCH bigger then this, look at his boss battle on lust and look down below, those lights you’re seeing are cities, and city lights usually look like that from low ORBIT, so the corpse of king Minos is so tall, his head and upper torso would most likely be in the stratosphere.

Holy crap, imagine just for one second if after Wave 50, Minos or Leviathan could appear as a stage hazard. Maybe limit their movesets a little to keep things semi cohesive, but seriously- HOW COOL WOULD THAT BE?
