Ah the backstory of COVID: During quarantine I went through my OLD seeds and found a bunch of what I thought was pumpkin. Just tossed into the ground as trash to use as mulch. Well, surprise surprise surprise...zucchini....about 8 separate huge overproducing plants. So I transplanted the seedlings and have 5 large mega producing plants. So this receipe I found it, tried it, will do again. Tons of zucchini, giving away to neighbors, picked fresh everyday...this was an absoulutely delicious fritter, which I had never had before. Making it again tomorrow...
