Works well with "Pure, Lump Charcoal" too. Make sure the charcoal is not treated with chemicals and DO NOT use lighter fluids to ignite the coals. Just a couple of wadded up sheets of newspaper in a "chimney starter", with lumps on top. Some use seasonings, or just plain salt, then season it off heat. Let it rest in a 140-degree oven for 10 minutes or so to re absorb.

Does it taste better when cooked right on the coals? Or is it the same as having it on a grill or rock over the fire?
